PISTA KULFI



Ingredients:

 2 Cups of evaporated milk 
 1 Cup condensed milk 
 30 gm Whipped cream 
 1/2 tsp Ground green cardamom powder 
 1/4 Cup of green sliced pista 
 Sugar to taste

method:

• Pour evaporated milk, condensed milk and whipped cream in a mixer.
• Add ground green cardamom powder & sugar.
• Blend well the mixture.
• Then add sliced green pista and stir slightly.
• Now fill the mixture in Kulfi cones or ice cream tray.
• Place it in the freezer for a whole night.
• At the time of serving, keep the outer surface of the ice cream tray or cones in contact with   water for just 5-6seconds and remove it in a plate.
• Pista Kulfi is ready to be served.

Tutti Frutti Ice Cream






Ingredients: 

3 scoops vanilla ice-cream
3 tbsp jam of choice about
4 tbsp mixed fruit-chopped and sweetened
3 tbsp roasted and chopped nuts
whipped cream to decorate
a tall glass to serve the ice cream


Method: 

Place 2 tbsp of fruit at the bottom of the glass.  Top this with one scoop of ice-cream. Pour 1 tbsp of jam over this, and then 1 tbsp of nuts. Repeat the fruit, ice-cream, jam and nuts layer. Top with the last scoop of ice-cream, jam and nuts. Pipe the whipped cream decoratively around and serve.

Vanilla Ice Cream




Ingredients:

cups heavy cream
1 cup whole milk or half-and-half
¾ cup sugar
1 vanilla bean, split lengthwise
¾  tsp. vanilla extract


Method:

Pour 1 cup of the cream into a medium saucepan and add the sugar. Scrape the seeds from the vanilla pod into the saucepan and add the pod to the pot. Warm over medium heat, stirring, until the sugar is dissolved. Remove from heat and add the remaining cream, the half-and-half, and the vanilla extract. Chill mixture thoroughly in the refrigerator, for at least eight hours or overnight.  When ready to churn, remove the vanilla pod (reserve the bean for another use), then freeze in your ice-cream maker . 

Eggless choclate icecream





Ingredients: 

500 ml Milk 
6 tbsp Milk Power 
500 ml Cream 
3/4 Cup Sugar 
3 tbsp Cocoa Powder 
3 tbsp Drinking Chocolate 
1 tbsp Liquid Glucose 
1 tsp Stabilizer 
2 tsp Chocolate Essence 
to garnish a few shavings of white chocolate. 


Method:

Place cream, milk and sugar to boil, add drinking chocolate. Mix Stabliser in 1 thsp Warm Milk and then add it to the boiling mik. Mix cornflour in 1 tbsp water. add it to the boiling milk till milk thickens, remove from fire and set aside to cool. Add Cocoa Powder, Chocolate Essence and blend in the mixer with milk powder. Freeze the mixture in freezer tilll semi set. Remove and again pour the mixture in the blender and blend at high speed to break the crystals. Add lightly fold whipping cream in this mixture and pour in an air tight container. freeze for a few hours or overnight. Serve with shavings of white chocolate. 


Sitaphal Ice Cream



 Ingredients:

3 cups sitaphal (custard apple) pulp
1 can condensed milk
sugar if required 

Method: 

Empty can of condensed milk in a large beating bowl. Chill condensed milk for 10 minutes in freezer. Puree sitaphal pulp, saving a tbsp. a side. Beat condensed milk with an electric hand beater, till foamy. Add puree and beat again, fold in saved pulp. Make ice cream either in ice cream churner, or set in freezer tray. Stir with a fork or spoon every 1/2 hour, till ice cream is almost set. Remove in bowl again, beat with a wooden spoon or spatula till light. Refreeze till well set. Serve in scoops or slices. Delicious Custard Apple (Sitaphal) Ice cream is ready.
